Paleo Brownies

I've made these brownies quite a bit, especially since my oldest has started eating grain and dairy free.  They are quick to throw together and are even enjoyed by my non-Paleo eaters.  Here's the recipe (slightly modified from this recipe ): Paleo Brownies 6 tablespoons coconut oil, melted 3 eggs, room temperature 3/4 cup cocoa powder 3/4 almond butter (we use no sugar added) 2/3 cup honey 3/8 teaspoon baking soda 1 1/2 teaspoons vanilla 1/4 cup mini enjoy life chocolate chips, optional Preheat oven to 325 degrees.  Grease a 7 by 10 inch pan with coconut oil.   Combine all ingredients except chocolate chips in food processor and mix until well-blended.  Spread into prepared pan and sprinkle with chocolate chips if desired. Bake 28 to 30 minutes or until center is almost set.  Let cool, and store in the fridge until devoured!  Enjoy!

Snickers Brownies

We are continuing to make items for the bake sale this Saturday.  Of course, I had to make one of my favorites:  Snickers Brownies.  The name says it all.  My husband teases me because I think that brownies are the perfect dessert.  If we are having people over, I almost always make a pan.  Often, we have brownie hot fudge sundaes--perfection in dessert if I ever tasted it!  My sister-in-law, Steph, teases me because I almost never make a "plain brownie."  To me, if a little chocolate is good, more is better!  Snickers Brownies 1 box German chocolate cake mix (or any chocolate cake mix) 3/4 cup butter 2/3 cup evaporated milk, divided 1 cup chocolate chips 1 cup chopped nuts 50 caramels, a 14 oz. bag (or buy the bag of caramel bits that you don't have to unwrap.  You can find these by the chocolate chips) Combine cake mix, butter, and 1/3 cup evaporated milk.  Spread 1/2 of cake mixture in greased 9 by 13 inch pan....

Double Fudge Brownie Mix

So, the bake sale preparation continues at our house.  Today, Evan and I mixed up some Chocolate Peanut Butter Chip Cookies to bake tomorrow.  I also put together a couple of Double Fudge Brownie Mixes.  The original recipe says to put it in a quart jar, but I like to use a bag.  I think they will make a nice addition to the bake sale--something people can buy and make later.  Find the recipe here.

Double Peanut Butter Brownies

This is another peanut butter/chocolate recipe that I received from my friend Kristin.  She and I share a love for chocolate!  I really wish I had taken a picture of a brownie once it was cut.  Unfortunately, I was too busy eating it to get my camera!  With a peanut butter crust and brownie on top, it makes a pretty presentation as well as being delicious. I think the recipe was originally from the back of a Betty Crocker Supreme Peanut Butter Brownie mix.  I have not been able to find this particular mix, so I just adapted a plain fudge brownie mix to the recipe. Peanut Butter Brownies

So I was trying to think of something to make for church potluck tomorrow, something that I had the ingredients for and something that my son, Evan, could help me with.  My husband Matthew teases me that I always make brownies for such occasions.  My sister-in-law Stephanie teases me that I can't just make a plain brownie.  Well, I plead guilty on both counts!  Evan and I concocted these peanut butter brownies, and I think they are going to be good. To make, start with any brownie mix for a 9 by 13 inch pan size.  Make the "cake-like" brownie recipe (add three eggs instead of two).  After your batter is mixed, add 1 1/2 cups peanut butter chips before placing in pan and baking according to package directions.  We frosted them with peanut butter frosting--I'll include the recipe below.  That seemed a little too plain, so I melted 1/4 cup chocolate chips with 1/2 teaspoon shortening in the microwave and drizzled it over the top....
