Our Favorite Cinnamon Rolls

I have made these cinnamon rolls more times than I can count!  I have combined a couple of recipes and modified them slightly, so I decided to post my techniques all in one place.  The recipe I use for the rolls is actually from a raspberry sweet roll recipe that I found on Pinterest.  I have actually made the entire recipe, and it is really good.  The recipe for the frosting is from a post for 30 minute cinnamon knots .  However, I double the recipe because we like a little bit of cinnamon roll with our frosting!  I highly recommned making the cinnamon knot recipe with kids--it's quick, easy, and fun.  (It is also messy, so make these before you plan to mop your kitchen floor! Also, plan for the process to take longer than 30 minutes!  ☺)  Here's my recipe! Whole Wheat Dinner Rolls

I found this recipe on Pinterest over a year ago.  I have made it many times and have altered it just a bit, so I thought it was time to post my variations. Though the original recipe says that these are "30 Minute Rolls," it takes me slightly longer than that to have these ready.  That being said, they are fast.  I have often found myself (at 5:00 PM) deciding to make these to go along with supper that evening.  They are one of my kids favorites, and they freeze great, too (if you have any leftovers.)  We have even used them as buns for hamburgers or hot ham and cheese. Here's the recipe: Whole Wheat Dinner Rolls 2 1/4 cup warm water 2/3 cup butter, melted 1/4 cup yeast 1/2 cup sugar 1 T. salt 2 eggs, slightly beaten 4 1/2 cups all purpose flour, divided 3 cups whole wheat flour Preheat the oven to 400 degrees.  Combine water, butter, yeast, and sugar in mixer bowl and allow to proof for 15 minutes.  Add remaining ingredients ex...

French Toast Bake

This is one of my son's favorite breakfasts!  Since is has a caramel sauce on the bottom, he has always called it "Jelly French Toast."  If I ask him what he would like for breakfast, that is usually his request.  I have been wanting to post this recipe for quite a while.  However, my pictures have not turned out so great.  So this morning I finally got one that we thought was decent.   For this recipe, you do need to plan ahead since it needs to refrigerate overnight.  It comes together in a flash, though.  It's also a great way to use up your bread that has gotten a bit too stale for sandwiches.  Sometime I hope to make it using some homemade French bread.  (I'll update when I do!) Perfect Pumpkin Bread

We really like this pumpkin bread recipe, but the taste itself is not what makes it perfect.  The thing that makes it perfect is that it uses exactly 1 can of pumpkin!  I can't tell you how many times I have made a recipe that uses one cup pumpkin.  Thinking I will use the remaining 3/4 cup at a later date, I put it in a container in the refrigerator.  Weeks later, I pull out an unidentifiable substance that is covered in mold.  Oops!  Well, no penicillin experiments with this one!  Just throw the whole can in! Almond Poppy Seed Bread

My sister-in-law Stephanie brought this bread to a couple of different gatherings over Christmas this year. I think my son, Evan, would have eaten the entire loaf if I had let him. Of course, I had to have the recipe. I received this fancy mini loaf bread pan from my brother for Christmas, and I was itching to try it out. I thought this was the perfect recipe to use it for. Almond Poppy Seed Bread Add to mixing bowl in order: 3 c. flour 1/2 Tb. baking powder 3 eggs 1 c. + 1 Tb. oil (to lighten it up, replace 1/2 c. of the oil with 1/2 c. unsweetened applesauce) 1 1/2 tsp. vanilla 1 1/2 tsp. salt 2 1/4 c. sugar 1 1/2 c. milk 3 Tb. poppy seeds 1/2 tsp. almond extract Beat 2 minutes. Pour into two 9 by 5 or six 6 by 3.5 inch greased loaf pans. Bake at 350 degreese 45-50 minutes for 9 by 5 loaf pans. For the smaller loaf size, bake about 40 minutes. Bread is done when a toothpick inserted in the center comes out clean. For the glaze, whisk together: 3/4 c....

Soft Oatmeal Bread

Here's another bread that I like to make often.  Since I use the bread machine to make the dough, it is a no-fuss recipe.   Right now I am trying to avoid dairy products to attempt to help with Grant's fussiness.  This bread contains no milk ingredients.  You can substitue sugar for the honey as well if you would prefer! Soft Oatmeal Bread 1 1/ 4 cups plus 2 tablespoons warm water 1/4 cup honey 1/4 cup vegetable oil 2 teaspoons salt 1 teaspoon lemon juice 3 cups flour 1 1/2 cup quick-cooking oats 2 1/2 teaspoons yeast Place ingredients in bread pan in order suggested by the manufacturer.  Select "dough" setting.  When the cycle is complete, punch dough down.  On a lightly floured surface, roll the dough into a 9 inch by 18 inch rectangle.  Starting with a short end, roll up the dough.  Pinch ends together to seal.  Place in a greased 9 by 5 inch bread pan.  Cover and let rise in a...

Lemon Poppy Seed Bread

The preparation for the bake sale next week continues at my house--yesterday we made one of our favorites:  Lemon Poppy Seed Bread.  My son, Evan, can't get enough of this stuff. I got the recipe from Simply Colorado, Too , a cookbook that we received as a wedding gift.  It boasts healthier recipes.  This one uses applesauce and still is moist and delicious, so I feel good about making it. Here's the recipe: Lemon Poppy Seed Bread 3 cups flour 2 1/4 cups sugar 1 1/2  tablespoons poppy seeds 1 1/2 teaspoons salt 1 1/2 teaspoons baking powder 1 1/2 cups skim milk 1/2 cup unsweetened applesauce 1/4 cup canola oil 1/4 cup water 3 eggs 1 1/2 teaspoons vanilla extract 1 1/2 teaspoons lemon extract Glaze: 1/2 cup confectioners' sugar 3 tablespoons lemon juice 1/4 teaspoon vanilla extract.  For the bread, combine the dry ingredients in a mixer bowl and mix well.  Add the remaining ingredients.  Beat at low speed until blended,...

Honey-Wheat Oatmeal Bread

This recipe is one of our family's favorites.  I found it in a Taste of Home's Healthy Cooking Magazine.  I love the convenience of making the dough in the bread machine.  Here's the recipe: 1 1/4 cups warm water 1/2 cup honey 2 tablespoons canola oil 1 1/2 teaspoon salt 1 cup quick-cooking oats 1 1/2 cups bread flour (I use all-purpose) 1 1/2 cups whole wheat flour 1 package (1/4 ounce) active dry yeast  (2 1/4 teaspoons) In bread machine pan, place all ingredients in order suggested by manufacturer. If you have good luck baking in your bread machine, select basic bread setting, crust color, etc. and enjoy some bread in about three hours. I, however, do not have the patience to get the hang of how bread bakes in my bread machine.  My few attempts have not turned out that great, so I prefer to make the dough in the machine and then bake it in the oven.  So, select "dough" setting and wait until the dough is ready. Banana Bread

Ah, banana bread. . . I love the smell of it in my kitchen, especially on a cold, rainy day like today.  I have tried many variations of banana bread and muffins, but I always come back to this recipe.  It's a tried and true one from my mother-in-law, Lois.  This recipe is by far my kids' (and my husband's) favorite.  Here is the recipe: 1/2 cup butter or margarine, softened 1 cup sugar 2 eggs 3 ripe bananas 1 teaspoon baking soda 2 cups flour 1/2 teaspoon salt 1 teaspoon vanilla 1/2 cup chopped nuts, optional Heat oven to 350 degrees.  Stir soda and salt into flour.  Cream butter and sugar; add eggs and beat until light.  Add bananas and beat well to mix.  (I never mash my bananas first--just put them in and let the mixer do the work!)  Mix in flour.  Blend in vanilla and nuts, if desired.  Bake in 9 by 5 inch loaf pan for one hour or until done.  Loaf is done when toothpick inserted in center comes out clean. ...

This is one of my favorite breads to make.  I got the recipe from my good friend Bill.  He was one of my classmates in dental school.  My husband, Matt, and I spent many an evening over at Bill and Jenn's apartment eating supper and playing board games late into the night.  At one of these get togethers, they served this bread.  I think I ate at least three pieces and later requested the recipe.  I was delighted to discover that you make the dough in the bread machine.  Here is the recipe: Oatmeal bread 1 1/4 cup plus 1 tablespoon hot water 3 tablespoons dry milk 2 tablespoons butter 1 1/2 teaspoons salt 3 tablespoons honey 3 1/2 cup bread flour 3/4 cup oatmeal 1 1/2 teaspoon yeast Place ingredients into bread machine pan in order recommended by manufacture.  Select "dough" setting.  Check dough in 5 minutes.  Add 1 teaspoon water or 1 teaspoon flour if needed.
